2 lbs regular sausage
2 lbs potatoes, cubed in bite sized pieces
1 large onion, chopped
1 c celery, finely chopped
1 c cream
4 - 6 c chicken broth
2 T oil
Cook onion with oil in large frying pan on med- low till transparent. Try not to brown them too much. Add celery and cook for 2 min more. Turn heat to medium and add sausage to onions and cook thoroughly. Drain grease from pan. Return sausage to pan and brown on high heat. Meanwhile boil enough chicken broth to cover cubed potatoes. When boiling, add potatoes and boil for 6 - 10 minutes until the potatoes are soft. Take out excess broth, broth should just cover the potatoes. Add sausage mixture. Add cream. Taste, add extra broth or cream to your liking.
