Gabby's Guatamalan Re-fried Beans

1 can black or pinto beans
1 small onion chopped finely
1/4 c oil

Heat oil in pan over med high heat. Fry onions in oil, stirring occasionally until browned and almost blackend but not burnt. Add whole can of beans and stir. Let beans and onions simmer on low, stirring occasionally until the bean juice reduces and becomes thicker. Salt to taste.

Serve over taco salad or in bean burritos or whatever you want. Top with cheese, sour cream, and guacamole for a layered dip.
