Snickerdoodles

Yield: about 20 cookies

330 grams (2 3/4 c) flour
1 tsp baking soda
1/2 tsp salt
1/2 shortening
1 stick butter
1 1/2 c sugar
2 lg eggs
1 T cinnamon
3 T sugar

Preheat oven to 350

Sift the flour, baking soda, and salt into a bowl.

Beat together shortening and butter till smooth. Add sugar and beat until light and fluffy, about 5 min. Add eggs, one at a time, beating well after each addition. Add flour mixture 1 c at a time and blend till smooth.

Mix the remaining sugar and cinnamon in a small bowl. Roll the dough into 1 1/2 in balls. Roll balls into sugar mix. Flatten the balls into 1/2 in disks, spacing them evenly on parchment lined baking sheets. Bake until light brown, but still moist in the center, about 12 min. Cool on a baking rack.
