Yield: 1 dozen
120 grams flour
1 1/2 c oats
1/4 tsp salt
1 tsp baking soda
3/4 c brown sugar
1/2 c butter
2 eggs
4 ripe bananas
1 tsp almond extract
- Preheat oven to 350
- Sift all the dry ingredients together, add oats
- In a separate bowl cream the butter and sugar. Beat in bananas and almond extract. Add one - egg at a time and combine thoroughly after each.
- Add flour mixture and mix just until blended.
- Add to 12 paper lined muffin cups
- Bake for 25 - 30 minutes.
